Ingredients
- 1 medium butternut squash
- 2 cups nshima (cooked)
- 1 onion, chopped
- 2 tomatoes, diced
- 1/2 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the butternut squash in half lengthwise and scoop out the seeds.
- In a bowl, mix the cooked nshima, chopped onion, diced tomatoes, and fresh cilantro. Season with salt and pepper.
- Stuff the butternut squash halves with the nshima mixture.
- Place the stuffed squash on a baking sheet and bake for 40 minutes, or until the squash is tender.
- Serve hot and enjoy!
