Ingredients

  • 1 medium butternut squash
  • 2 cups nshima (cooked)
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1/2 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the butternut squash in half lengthwise and scoop out the seeds.
  3. In a bowl, mix the cooked nshima, chopped onion, diced tomatoes, and fresh cilantro. Season with salt and pepper.
  4. Stuff the butternut squash halves with the nshima mixture.
  5. Place the stuffed squash on a baking sheet and bake for 40 minutes, or until the squash is tender.
