Vinkubala Vya Nkumbi (nshima-stuffed Sweet Peppers)
Vinkubala Vya Nkumbi is a traditional Zambian dish that combines the flavors of nshima and sweet peppers for a unique and delicious meal.
Ingredients
- 4 large sweet peppers
- 2 cups cooked nshima
- 1 cup cooked vinkubala (caterpillars)
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon vegetable oil
Instructions
- Cut the tops off the sweet peppers and remove the seeds and membranes.
- In a bowl, mix the cooked nshima, vinkubala, onion, tomatoes, salt, and black pepper.
- Stuff the sweet peppers with the nshima mixture.
- Heat the vegetable oil in a pan over medium heat.
- Add the stuffed sweet peppers to the pan and cook for 10-15 minutes, turning occasionally, until the peppers are tender and slightly charred.
- Serve the stuffed sweet peppers hot and enjoy!
