Ingredients

  • 4 large sweet peppers
  • 2 cups cooked nshima
  • 1 cup cooked vinkubala (caterpillars)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon vegetable oil

Instructions

  1. Cut the tops off the sweet peppers and remove the seeds and membranes.
  2. In a bowl, mix the cooked nshima, vinkubala, onion, tomatoes, salt, and black pepper.
  3. Stuff the sweet peppers with the nshima mixture.
  4. Heat the vegetable oil in a pan over medium heat.
  5. Add the stuffed sweet peppers to the pan and cook for 10-15 minutes, turning occasionally, until the peppers are tender and slightly charred.
  6. Serve the stuffed sweet peppers hot and enjoy!
