Ingredients
- 1 cup vinkubala (African caterpillars)
- 2 cups mixed vegetables (such as carrots, green beans, and bell peppers)
- 1 onion, chopped
- 3 tomatoes, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 2 tbsp vegetable oil
- 2 cups vegetable broth
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, ginger, and green chilies. Sauté until the onions are soft and translucent.
- Add the vinkubala and cook for 5 minutes, stirring occasionally.
- Stir in the ground cumin, coriander, turmeric, paprika, cayenne pepper, and salt. Cook for another 2 minutes.
- Add the mixed vegetables and tomatoes to the pot. Stir well to combine all the ingredients.
- Pour in the vegetable broth and bring the curry to a simmer. Cover the pot and cook for 15-20 minutes, or until the vegetables are tender.
- Garnish with fresh cilantro before serving.
