Ingredients
- 1 cup dried vinkubala (caterpillars)
- 2 cups chopped kale
- 1 cup chopped tomatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt to taste
- 6 cups vegetable broth
- 2 tbsp cooking oil
Instructions
- Soak the dried vinkubala in water for 1 hour, then drain and rinse.
- Heat the cooking oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
- Add the soaked vinkubala to the pot and cook for 5 minutes.
- Stir in the chopped tomatoes, ground cumin, paprika, cayenne pepper, and salt. Cook for another 5 minutes.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 20 minutes.
- Add the chopped kale to the pot and cook for an additional 10 minutes.
- Adjust the seasoning if needed, then serve the spicy Zambian vegetable soup hot.
