Ingredients

  • 2 large sweet potatoes, grated

Instructions

  1. Place the grated sweet potatoes in a large bowl.

  3. Heat vegetable oil in a frying pan over medium heat.
  4. Scoop a spoonful of the sweet potato mixture and carefully place it in the hot oil. Flatten it slightly with the back of the spoon.
  5. Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
  6. Remove the fritters from the oil and place them on a paper towel to drain any excess oil.
  7. Repeat the process with the remaining sweet potato mixture.
