Ingredients
- 2 large sweet potatoes, grated
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Vegetable oil for frying
Instructions
- Place the grated sweet potatoes in a large bowl.
- Add the flour, sugar, cinnamon, and salt to the bowl with the sweet potatoes. Mix well until the ingredients are combined.
- Heat vegetable oil in a frying pan over medium heat.
- Scoop a spoonful of the sweet potato mixture and carefully place it in the hot oil. Flatten it slightly with the back of the spoon.
- Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
- Remove the fritters from the oil and place them on a paper towel to drain any excess oil.
- Repeat the process with the remaining sweet potato mixture.
- Serve the Vinkubala Vya Nkumbi hot and enjoy!
