Vis Beignets (surinamese Fish Fritters)

Ingredients

  • 1 lb white fish fillets, such as cod or tilapia, finely chopped

  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped scallions
  • 1 egg, beaten
  • 1/2 cup water
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine the chopped fish, flour, onion, garlic, cumin, turmeric, cayenne pepper, cilantro, and scallions.
  2. Stir in the beaten egg and water to form a thick batter. Season with salt and pepper.
  3. Heat oil in a deep skillet over medium heat.
  4. Scoop spoonfuls of the fish batter and carefully drop them into the hot oil.
  5. Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove the fritters from the oil and drain on paper towels.
  7. Serve the Vis Beignets hot with your favorite dipping sauce.
