Ingredients

  • 500g monkfish fillets, cut into chunks

  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 can (400g) diced tomatoes
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 liter fish or vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the carrots, potatoes, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
  3. Pour in the diced tomatoes and fish or vegetable broth. Add the bay leaf, paprika, and thyme. Season with salt and pepper to taste.
  4. Bring the stew to a boil, then reduce the heat and let it simmer for 30 minutes.
  5. Add the monkfish chunks to the pot and simmer for an additional 15-20 minutes, or until the fish is cooked through.
  6. Adjust the seasoning if needed, then remove the bay leaf before serving.
