Ingredients
- 500g monkfish fillets, cut into chunks
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 red bell pepper, chopped
- 1 can (400g) diced tomatoes
- 1 bay leaf
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 liter fish or vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the carrots, potatoes, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the diced tomatoes and fish or vegetable broth. Add the bay leaf, paprika, and thyme. Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce the heat and let it simmer for 30 minutes.
- Add the monkfish chunks to the pot and simmer for an additional 15-20 minutes, or until the fish is cooked through.
- Adjust the seasoning if needed, then remove the bay leaf before serving.
