Ingredients

  • 1 lb fresh fish fillets, cut into chunks

  • 1 scotch bonnet pepper, whole
  • 1 cup coconut milk
  • 4 cups fish or vegetable broth
  • 2 tbsp curry powder
  • Salt and pepper to taste
  • 2 tbsp chopped cilantro for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the bell pepper, tomatoes, and scotch bonnet pepper, and cook for 5 minutes.
  3. Stir in the curry powder and cook for another 2 minutes.
  4. Pour in the coconut milk and fish or vegetable broth, then add the fish chunks.
  5. Simmer for 20-25 minutes until the fish is cooked through.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped cilantro before serving.
