Ingredients
- 1 lb fresh fish fillets, cut into chunks
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 scotch bonnet pepper, whole
- 1 cup coconut milk
- 4 cups fish or vegetable broth
- 2 tbsp curry powder
- Salt and pepper to taste
- 2 tbsp chopped cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the bell pepper, tomatoes, and scotch bonnet pepper, and cook for 5 minutes.
- Stir in the curry powder and cook for another 2 minutes.
- Pour in the coconut milk and fish or vegetable broth, then add the fish chunks.
- Simmer for 20-25 minutes until the fish is cooked through.
- Season with salt and pepper to taste.
- Garnish with chopped cilantro before serving.
