Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup water
  • 2 cups pitted cherries
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup butter
  • Sour cream (for serving)

Instructions

  1. In a large bowl, combine the flour and salt. Make a well in the center and add the egg and water. Mix until the dough comes together.
  2. Knead the dough on a floured surface until smooth. Cover with a towel and let it rest for 15 minutes.
  3. Meanwhile, in a separate bowl, mix the cherries, sugar, and vanilla extract.
  4. Roll out the dough on a floured surface and cut into circles using a glass or a cookie cutter.
  5. Place a spoonful of the cherry filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
  6. Bring a large pot of water to a boil. Drop the vareniki into the boiling water and cook for 3-4 minutes, or until they float to the surface.
  7. Remove the vareniki with a slotted spoon and place them in a serving dish. Drizzle with melted butter.
  8. Serve the vareniki with a dollop of sour cream.
