Vishnevyy Varenyk (cossack Cherry Vareniki)
Vishnevyy Varenyk, also known as Cossack Cherry Vareniki, is a traditional Ukrainian dish that is popular in Cossack cuisine. These delicious dumplings are filled with sweet cherries and are perfect for a comforting dessert or a special treat.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup water
- 2 cups pitted cherries
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup butter
- Sour cream (for serving)
Instructions
- In a large bowl, combine the flour and salt. Make a well in the center and add the egg and water. Mix until the dough comes together.
- Knead the dough on a floured surface until smooth. Cover with a towel and let it rest for 15 minutes.
- Meanwhile, in a separate bowl, mix the cherries, sugar, and vanilla extract.
- Roll out the dough on a floured surface and cut into circles using a glass or a cookie cutter.
- Place a spoonful of the cherry filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
- Bring a large pot of water to a boil. Drop the vareniki into the boiling water and cook for 3-4 minutes, or until they float to the surface.
- Remove the vareniki with a slotted spoon and place them in a serving dish. Drizzle with melted butter.
- Serve the vareniki with a dollop of sour cream.
