Vlaamse Stoofkarbonaden (belgian Flemish Carbonnade)
Vlaamse Stoofkarbonaden, also known as Belgian Flemish Carbonnade, is a traditional dish from Northern European cuisine. This hearty beef stew is slow-cooked in a rich and flavorful beer-based sauce, making it a comforting and satisfying meal.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 large onions, sliced
- 3 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups Belgian ale or dark beer
- 1 cup beef broth
- 2 tbsp brown sugar
- 2 tbsp apple cider vinegar
- 2 bay leaves
- 4 slices of bread, toasted
- 2 tbsp Dijon mustard
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large Dutch oven, heat some oil over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef and set aside.
- Add the sliced onions to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
- Sprinkle the flour over the onions and garlic, stirring to coat. Cook for 1-2 minutes to remove the raw flour taste.
- Pour in the beer and beef broth, stirring to scrape up any browned bits from the bottom of the pot. Add the browned beef back into the pot.
- Stir in the brown sugar, apple cider vinegar, and bay leaves. Season with salt and pepper.
- Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 1.5 to 2 hours, or until the beef is tender.
- Spread the Dijon mustard on the toasted bread slices and place them on top of the stew. Cover and cook for an additional 10 minutes to allow the flavors to meld.
- Discard the bay leaves and adjust the seasoning if needed. Serve the Vlaamse Stoofkarbonaden hot, garnished with chopped fresh parsley.
