Ingredients

  • 4 large plantains
  • 1 lb ground beef
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 1 bell pepper, diced

  • Salt and pepper to taste
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Peel the plantains and slice them lengthwise.
  3. In a skillet, brown the ground beef with the diced onion, tomatoes, bell pepper, garlic, cumin, paprika, salt, and pepper.
  4. Arrange the plantain slices in a greased baking dish to form a volcano shape.
  5. Spoon the cooked beef mixture into the center of the plantain volcano.
  6. Sprinkle the shredded cheese on top of the beef mixture.
  7. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes before serving.
