Voodoo Chicken

Ingredients

  • 4 chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, and paprika.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chicken thighs and cook until browned, about 5 minutes per side. Remove from the skillet and set aside.
  4. In the same skillet, add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
  5. Stir in the thyme, paprika, and cayenne pepper. Cook for 1 minute.
  6. Pour in the chicken broth and bring to a simmer.
  7. Return the chicken thighs to the skillet and simmer for 20-25 minutes, or until the chicken is cooked through.
  8. Serve the voodoo chicken hot, garnished with fresh herbs if desired.
