Ingredients
- 4 chicken thighs
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 teaspoon thyme
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt, pepper, and paprika.
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken thighs and cook until browned, about 5 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
- Stir in the thyme, paprika, and cayenne pepper. Cook for 1 minute.
- Pour in the chicken broth and bring to a simmer.
- Return the chicken thighs to the skillet and simmer for 20-25 minutes, or until the chicken is cooked through.
- Serve the voodoo chicken hot, garnished with fresh herbs if desired.
