Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb white fish fillets, cut into chunks
- 1 lb mixed seafood (mussels, clams, squid)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup diced tomatoes
- 4 cups fish or seafood broth
- 1/2 cup white wine
- 1/4 cup chopped cilantro
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper, and sauté until softened.
- Add the diced tomatoes and cook for a few minutes until they start to break down.
- Pour in the white wine and let it simmer for 2-3 minutes to cook off the alcohol.
- Add the seafood broth and bring the mixture to a simmer.
- Gently add the seafood to the pot and let it cook for 5-7 minutes until the shrimp turn pink and the fish is opaque.
- Stir in the chopped cilantro and season with salt and pepper to taste.
- Serve the Vuelve a la Vida Seafood Stew hot, garnished with additional cilantro if desired.
