Ingredients

  • 2 cups of rice
  • 1 cup of black-eyed peas
  • 2 ripe plantains, sliced
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 1 tablespoon of red palm oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground cloves
  • Salt to taste

Instructions

  1. Rinse the rice and black-eyed peas, then soak them in water for at least 30 minutes.
  2. In a large pot, bring 4 cups of water to a boil. Add the soaked rice and black-eyed peas, then reduce the heat and simmer for 30 minutes.
  3. In a separate pan, heat the red palm oil and sauté the onions and tomatoes until soft.
  4. Add the thyme, ginger, cloves, and salt to the tomato mixture, then stir to combine.
  5. Add the tomato mixture to the pot of rice and beans, then continue to simmer for an additional 20 minutes, or until the rice and beans are tender.
  6. While the waakye is cooking, fry the sliced plantains until golden brown and crispy.
  7. Serve the waakye with the fried plantains and your choice of side dishes.
