Waakye Whirlwind

Ingredients
- 2 cups of rice
- 1 cup of black-eyed peas
- 2 ripe plantains, sliced
- 1 onion, chopped
- 3 tomatoes, chopped
- 1 tablespoon of red palm oil
- 1 teaspoon of dried thyme
- 1 teaspoon of ground ginger
- 1 teaspoon of ground cloves
- Salt to taste
Instructions
- Rinse the rice and black-eyed peas, then soak them in water for at least 30 minutes.
- In a large pot, bring 4 cups of water to a boil. Add the soaked rice and black-eyed peas, then reduce the heat and simmer for 30 minutes.
- In a separate pan, heat the red palm oil and sauté the onions and tomatoes until soft.
- Add the thyme, ginger, cloves, and salt to the tomato mixture, then stir to combine.
- Add the tomato mixture to the pot of rice and beans, then continue to simmer for an additional 20 minutes, or until the rice and beans are tender.
- While the waakye is cooking, fry the sliced plantains until golden brown and crispy.
- Serve the waakye with the fried plantains and your choice of side dishes.
