Ingredients
- 2 cups of rice
- 1 cup of black-eyed peas
- 2 tomatoes, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 1 tablespoon of red palm oil
- 1 teaspoon of dried thyme
- 1 teaspoon of dried pepper flakes
- Salt to taste
Instructions
- Rinse the rice and black-eyed peas, then soak them separately in water for at least 30 minutes.
- In a large pot, heat the red palm oil over medium heat. Add the chopped onions, garlic, and ginger, and sauté until fragrant.
- Add the chopped tomatoes, thyme, and pepper flakes to the pot, and cook until the tomatoes break down and the mixture thickens.
- Drain the soaked rice and black-eyed peas, then add them to the pot with 4 cups of water. Season with salt, cover, and simmer for 20-25 minutes, or until the rice and beans are tender and the liquid is absorbed.
- Fluff the waakye with a fork, and serve hot with your choice of sides such as fried plantains, spaghetti, gari (cassava flakes), and a spicy pepper sauce.
