Ingredients
- 2 cups of rice
- 1 cup of black-eyed peas
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 teaspoon of dried thyme
- 1 teaspoon of ground ginger
- 1 teaspoon of red pepper flakes
- Salt to taste
Instructions
- Rinse the rice and black-eyed peas, then soak them in water for at least 30 minutes.
- In a large pot, combine the soaked rice and peas with enough water to cover them by about 1 inch. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the rice and peas are tender.
- While the rice and peas are cooking, sauté the chopped onion and tomatoes in a separate pan until softened.
- Add the thyme, ginger, red pepper flakes, and salt to the sautéed vegetables, and cook for an additional 5 minutes.
- Once the rice and peas are cooked, stir in the sautéed vegetables and spices, and mix well.
- Cover the pot and let the waakye simmer for an additional 5-10 minutes to allow the flavors to meld together.
- Remove from heat and serve hot with your choice of sides and sauces.
