Ingredients

  • 2 cups of white rice
  • 1 cup of red beans
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 3 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 4 cups of water

Instructions

  1. Rinse the rice and beans under cold water.
  2. In a large pot, sauté the onions and garlic until fragrant.
  3. Add the tomatoes, cumin, paprika, salt, and pepper. Cook for 5 minutes.
  4. Stir in the rice and beans, then add the water.
  5. Cover and simmer for 30 minutes, or until the rice and beans are tender.
  6. Fluff with a fork and serve hot.
