Wali Wa Nazi (coconut Rice Pilaf)
Wali wa Nazi, also known as Coconut Rice Pilaf, is a traditional dish from the Maasai people of East Africa. This flavorful and aromatic rice dish is made with coconut milk and is often served with meat or vegetable stews.
Ingredients
- 2 cups basmati rice
- 1 can (14 oz) coconut milk
- 1 3/4 cups water
- 1 teaspoon salt
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Stir in the basmati rice and cook for 2 minutes, stirring frequently.
- Pour in the coconut milk, water, and salt. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork before serving.
