Ingredients

  • 2 cups basmati rice
  • 1 can (14 oz) coconut milk
  • 1 3/4 cups water
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Stir in the basmati rice and cook for 2 minutes, stirring frequently.
  3. Pour in the coconut milk, water, and salt. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  4. Fluff the rice with a fork before serving.
