  • 1/2 cup peas
  • 3 tablespoons coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon curry powder
  • 1/4 cup cashews, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pan or wok, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the diced red bell pepper and peas, and cook for a few minutes until the vegetables are tender-crisp.
  4. Add the cooked rice to the pan, along with the diced pineapple, coconut milk, soy sauce, and curry powder. Stir well to combine all the ingredients.
  5. Cook the fried rice for a few more minutes, allowing the flavors to meld together.
  6. Season with salt and pepper to taste, and sprinkle the chopped cashews on top before serving.
