Walking Taco Bake
This walking taco bake is a fun and easy twist on the classic walking taco, perfect for a quick and delicious weeknight meal.
Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (15 ounces) black beans, drained and rinsed
- 1 bag (9 ounces) corn chips
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup sliced jalapenos
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream
- 1/4 cup salsa
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the taco seasoning and black beans to the skillet with the ground beef. Cook for 2-3 minutes, stirring occasionally.
- Spread half of the corn chips in the bottom of a 9x13 inch baking dish. Top with the beef and bean mixture, then sprinkle with half of the shredded cheddar cheese.
- Add the remaining corn chips on top, followed by the remaining cheddar cheese, diced tomatoes, red onion, and jalapenos.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Top with sour cream, salsa, and fresh cilantro before serving.
