Walking Taco Bake

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 bag (9 ounces) corn chips
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup sliced jalapenos
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/4 cup salsa

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the taco seasoning and black beans to the skillet with the ground beef. Cook for 2-3 minutes, stirring occasionally.
  4. Spread half of the corn chips in the bottom of a 9x13 inch baking dish. Top with the beef and bean mixture, then sprinkle with half of the shredded cheddar cheese.
  5. Add the remaining corn chips on top, followed by the remaining cheddar cheese, diced tomatoes, red onion, and jalapenos.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool for a few minutes. Top with sour cream, salsa, and fresh cilantro before serving.
