Walking Taco Casserole

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 bag corn chips
  • 1 cup sour cream
  • 1/2 cup chopped tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the taco seasoning, black beans, and salsa to the skillet. Stir to combine and simmer for 5 minutes.
  4. Spread half of the corn chips in the bottom of a 9x13 inch baking dish. Top with half of the beef mixture and half of the shredded cheese.
  5. Repeat the layers with the remaining corn chips, beef mixture, and shredded cheese.
  6. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  7. Top the casserole with dollops of sour cream, chopped tomatoes, black olives, and green onions before serving.
