Walking Taco Casserole
This walking taco casserole is a fun and easy twist on the classic walking taco, perfect for feeding a crowd or a family dinner. It's a delicious combination of all your favorite taco ingredients in a convenient casserole form.
Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 bag corn chips
- 1 cup sour cream
- 1/2 cup chopped tomatoes
- 1/4 cup sliced black olives
- 1/4 cup chopped green onions
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the taco seasoning, black beans, and salsa to the skillet. Stir to combine and simmer for 5 minutes.
- Spread half of the corn chips in the bottom of a 9x13 inch baking dish. Top with half of the beef mixture and half of the shredded cheese.
- Repeat the layers with the remaining corn chips, beef mixture, and shredded cheese.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Top the casserole with dollops of sour cream, chopped tomatoes, black olives, and green onions before serving.
