Ingredients

  • 1 lb wallaby meat, tenderized
  • 1 sheet puff pastry
  • 1 cup mushroom duxelles
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F.
  2. Sear the wallaby meat in a hot pan until browned on all sides.
  3. Season the meat with salt and pepper, then let it cool.
  4. Roll out the puff pastry and spread the mushroom duxelles on top.
  5. Place the seared wallaby meat in the center of the pastry, then fold the pastry over the meat, sealing the edges.
  6. Brush the pastry with beaten egg and make a few slits on top for ventilation.
  7. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
