Wallaby Wellington
Wallaby Wellington is a classic Tasmanian dish that combines tender wallaby meat with a flaky pastry crust. This recipe puts a unique twist on the traditional Beef Wellington by using wallaby meat, a staple protein in Tasmanian cuisine.
Ingredients
- 1 lb wallaby meat, tenderized
- 1 sheet puff pastry
- 1 cup mushroom duxelles
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F.
- Sear the wallaby meat in a hot pan until browned on all sides.
- Season the meat with salt and pepper, then let it cool.
- Roll out the puff pastry and spread the mushroom duxelles on top.
- Place the seared wallaby meat in the center of the pastry, then fold the pastry over the meat, sealing the edges.
- Brush the pastry with beaten egg and make a few slits on top for ventilation.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
