Ingredients

  • 1 walrus tenderloin
  • 1 sheet puff pastry
  • 8 slices prosciutto
  • 1/2 cup mushroom duxelles
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the walrus tenderloin with salt and pepper.
  3. Wrap the tenderloin in prosciutto.
  4. Spread the mushroom duxelles over the puff pastry.
  5. Place the wrapped tenderloin on top of the duxelles.
  6. Wrap the puff pastry around the tenderloin, sealing the edges with the beaten egg.
  7. Brush the pastry with the remaining beaten egg.
  8. Bake for 40-45 minutes, or until the pastry is golden brown.
  9. Let it rest for 10 minutes before slicing and serving.
