Walrus Wellington

Ingredients
- 1 walrus tenderloin
- 1 sheet puff pastry
- 8 slices prosciutto
- 1/2 cup mushroom duxelles
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the walrus tenderloin with salt and pepper.
- Wrap the tenderloin in prosciutto.
- Spread the mushroom duxelles over the puff pastry.
- Place the wrapped tenderloin on top of the duxelles.
- Wrap the puff pastry around the tenderloin, sealing the edges with the beaten egg.
- Brush the pastry with the remaining beaten egg.
- Bake for 40-45 minutes, or until the pastry is golden brown.
- Let it rest for 10 minutes before slicing and serving.
