Wara Enab (sudanese Stuffed Grape Leaves)

Ingredients

  • 1 jar of grape leaves, drained and rinsed
  • 1 cup of rice
  • 1 onion, finely chopped
  • 1 tomato, diced
  • 1/4 cup of parsley, chopped
  • 1/4 cup of mint, chopped
  • 1/4 cup of olive oil
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of ground cinnamon
  • Salt and pepper to taste
  • Water

Instructions

  1. Rinse the rice under cold water and drain.
  2. In a bowl, mix the rice, chopped onion, diced tomato, parsley, mint, olive oil, coriander, cumin, cinnamon, salt, and pepper.
  3. Place a grape leaf on a flat surface, shiny side down, and remove the stem.
  4. Place a small amount of the rice mixture in the center of the leaf.
  5. Fold the sides of the leaf over the filling, then roll it up tightly.
  6. Repeat with the remaining grape leaves and filling.
  7. Place the stuffed grape leaves in a large pot, seam side down, and add enough water to cover them.
  8. Cover the pot and cook over medium heat for 45 minutes, or until the rice is tender.
  9. Remove the stuffed grape leaves from the pot and let them cool before serving.
