Wara Enab (sudanese Stuffed Grape Leaves)
Wara Enab is a traditional Sudanese dish consisting of grape leaves stuffed with a flavorful mixture of rice, vegetables, and spices. This dish is popular in Sudan and is often enjoyed as a delicious appetizer or main course.
Ingredients
- 1 jar of grape leaves, drained and rinsed
- 1 cup of rice
- 1 onion, finely chopped
- 1 tomato, diced
- 1/4 cup of parsley, chopped
- 1/4 cup of mint, chopped
- 1/4 cup of olive oil
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cumin
- 1/2 teaspoon of ground cinnamon
- Salt and pepper to taste
- Water
Instructions
- Rinse the rice under cold water and drain.
- In a bowl, mix the rice, chopped onion, diced tomato, parsley, mint, olive oil, coriander, cumin, cinnamon, salt, and pepper.
- Place a grape leaf on a flat surface, shiny side down, and remove the stem.
- Place a small amount of the rice mixture in the center of the leaf.
- Fold the sides of the leaf over the filling, then roll it up tightly.
- Repeat with the remaining grape leaves and filling.
- Place the stuffed grape leaves in a large pot, seam side down, and add enough water to cover them.
- Cover the pot and cook over medium heat for 45 minutes, or until the rice is tender.
- Remove the stuffed grape leaves from the pot and let them cool before serving.
