Warak Enab (damascus-style Stuffed Grape Leaves)
Warak Enab, or Damascus-style Stuffed Grape Leaves, is a popular dish in Syrian cuisine. These flavorful grape leaves are stuffed with a delicious mixture of rice, herbs, and spices, making them a perfect appetizer or main course.
Ingredients
- 1 jar grape leaves, drained and rinsed
- 1 cup long-grain rice
- 1 onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, juiced
Instructions
- In a large bowl, combine the rice, onion, parsley, mint, olive oil, allspice, cinnamon, salt, and black pepper.
- Place a grape leaf on a flat surface, shiny side down. Trim any stems. Place a small spoonful of the rice mixture in the center of the leaf.
- Fold the bottom of the leaf over the filling, then fold in the sides, and roll it up into a tight cylinder.
- Repeat with the remaining grape leaves and rice mixture.
- Place the stuffed grape leaves in a large pot, seam side down, in a single layer. Pour the lemon juice over the grape leaves.
- Place a heavy plate on top of the grape leaves to keep them from floating. Add enough water to cover the grape leaves.
- Cover the pot and simmer over low heat for 1 hour, or until the rice is cooked and the grape leaves are tender.
- Remove from the heat and let the grape leaves cool in the pot before serving.
