Warak Enab Mahshi (yemeni Spiced Stuffed Grape Leaves)

Ingredients

  • 1 jar of grape leaves
  • 1 cup of rice
  • 1 lb of ground beef
  • 1 onion, finely chopped
  • 1 tomato, diced
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh mint, chopped
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground cloves
  • Salt and pepper to taste
  • 2 cups of water
  • Juice of 2 lemons

Instructions

  1. Rinse the grape leaves under cold water and drain well.
  2. In a large bowl, combine the rice, ground beef, onion, tomato, parsley, mint, cumin, coriander, cinnamon, cloves, salt, and pepper. Mix well.
  3. Place a grape leaf on a flat surface, shiny side down. Place a spoonful of the rice and beef mixture in the center of the leaf. Fold the sides of the leaf over the filling and roll it up tightly.
  4. Repeat with the remaining grape leaves and filling.
  5. Place the stuffed grape leaves in a large pot, seam side down, in a single layer. Pour the water and lemon juice over the grape leaves.
  6. Cover the pot and cook over low heat for 1 hour, or until the grape leaves are tender and the filling is cooked through.
  7. Remove from the heat and let the grape leaves cool slightly before serving.
