Wasabi Shrimp Fried Rice Balls (Wasabi Ebi Chǎofàn Qiú)

Ingredients

  • 2 cups cooked white rice
  • 1/2 lb shrimp, peeled and deveined
  • 2 eggs, beaten
  • 2 green onions, finely chopped
  • 1 tbsp soy sauce
  • 1 tsp wasabi paste
  • 1/2 cup panko breadcrumbs
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the cooked white rice, soy sauce, and chopped green onions. Set aside.
  2. In another bowl, mix the shrimp, beaten eggs, wasabi paste, salt, and pepper.
  3. Take a small portion of the rice mixture and flatten it in your palm. Place a spoonful of the shrimp mixture in the center and form it into a ball.
  4. Roll the rice ball in panko breadcrumbs until fully coated.
  5. Heat vegetable oil in a pan and fry the rice balls until golden brown and crispy.
  6. Remove from the oil and drain on a paper towel.
  7. Serve the Wasabi Ebi Chǎofàn Qiú hot with a side of soy sauce for dipping.
