Wasabi Shrimp Fried Rice (Wasabi Ebi Chǎofàn)

Ingredients

  • 2 cups cooked white rice
  • 1/2 lb shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1/2 cup frozen peas, thawed
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp wasabi paste
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook for 2-3 minutes until pink and cooked through. Remove the shrimp from the skillet and set aside.
  3. Heat the remaining tablespoon of vegetable oil in the same skillet. Add the beaten eggs and scramble until cooked. Remove the eggs from the skillet and set aside.
  4. Stir in the garlic and white parts of the green onions, and cook for 1 minute.
  5. Add the cooked rice, soy sauce, and wasabi paste to the skillet. Stir-fry for 3-4 minutes until the rice is heated through.
  6. Add the cooked shrimp, scrambled eggs, and thawed peas to the skillet. Stir-fry for an additional 2-3 minutes.
  7. Season with salt and pepper to taste. Garnish with the remaining green onions.
  8. Serve the Wasabi Ebi Chǎofàn hot and enjoy!
