Water Pancake (neer Dosa)

Ingredients

  • 1 cup rice flour
  • 1/2 cup grated coconut
  • Salt to taste
  • Water as needed

Instructions

  1. In a bowl, mix the rice flour, grated coconut, and salt.
  2. Add water gradually and mix to form a thin batter. The batter should be watery, similar to buttermilk.
  3. Heat a non-stick pan over medium heat. Once hot, pour a ladleful of batter in a circular motion to cover the pan.
  4. Cook for a minute or until the edges start to lift. No need to flip the dosa.
  5. Repeat with the remaining batter.
  6. Serve hot with chutney or curry of your choice.
