Ingredients
- 4 chicken thighs
- 2 carrots, sliced
- 2 leeks, sliced
- 1 onion, chopped
- 2 celery stalks, chopped

- 2 tablespoons all-purpose flour
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chicken thighs and cook until browned on all sides. Remove the chicken and set aside.
- In the same pot, add the onion, leeks, carrots, and celery. Cook until the vegetables are softened.
- Sprinkle the flour over the vegetables and stir to combine. Cook for 2 minutes.
- Pour in the chicken broth and add the bay leaf. Bring to a simmer.
- Return the chicken to the pot and simmer for 20 minutes, or until the chicken is cooked through.
- Stir in the heavy cream and season with salt and pepper.
- Remove the bay leaf and serve the Waterzooi de Poulet hot.
