Ingredients

  • 4 chicken thighs
  • 2 carrots, sliced

  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chicken thighs and cook until browned on all sides. Remove the chicken and set aside.
  2. In the same pot, add the onion, leeks, carrots, and celery. Cook until the vegetables are softened.
  3. Sprinkle the flour over the vegetables and stir to combine. Cook for 2 minutes.
  4. Pour in the chicken broth and add the bay leaf. Bring to a simmer.
  5. Return the chicken to the pot and simmer for 20 minutes, or until the chicken is cooked through.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Remove the bay leaf and serve the Waterzooi de Poulet hot.
