Waterzooi Gantois (ghent Waterzooi)
Waterzooi Gantois, also known as Ghent Waterzooi, is a traditional Belgian dish originating from the city of Ghent. This creamy stew is made with chicken or fish, vegetables, and a flavorful broth, creating a comforting and hearty meal perfect for any time of the year.
Ingredients
- 4 chicken thighs or 4 fillets of white fish
- 2 leeks, sliced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 egg yolks
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 bay leaf
- Fresh parsley, for garnish
- Salt and pepper, to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the leeks, carrots, celery, and onion. Cook until the vegetables are softened, about 5 minutes.
- If using chicken, add the chicken thighs to the pot. Pour in the chicken broth and add the bay leaf. Bring to a simmer and cook for 20 minutes, or until the chicken is cooked through.
- If using fish, add the fish fillets to the pot and pour in the chicken or vegetable broth. Simmer for 10 minutes, or until the fish is cooked through.
- In a small bowl, whisk together the heavy cream and egg yolks. Slowly pour the cream mixture into the pot, stirring constantly. Cook for an additional 5 minutes, until the stew thickens slightly.
- In a separate small bowl, mix the flour with a few tablespoons of the hot broth from the pot to create a slurry. Stir the slurry back into the pot to further thicken the stew.
- Season the waterzooi with salt and pepper to taste. Remove the bay leaf and discard.
- Serve the waterzooi hot, garnished with fresh parsley.
