Waterzooi Gantois, also known as Ghent Waterzooi, is a traditional Belgian dish originating from the city of Ghent. This creamy stew is made with chicken or fish, vegetables, and a flavorful broth, creating a comforting and hearty meal perfect for any time of the year.

Ingredients

  • 4 chicken thighs or 4 fillets of white fish
  • 2 leeks, sliced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 egg yolks
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 bay leaf
  • Fresh parsley, for garnish
  • Salt and pepper, to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the leeks, carrots, celery, and onion. Cook until the vegetables are softened, about 5 minutes.
  2. If using chicken, add the chicken thighs to the pot. Pour in the chicken broth and add the bay leaf. Bring to a simmer and cook for 20 minutes, or until the chicken is cooked through.
  3. If using fish, add the fish fillets to the pot and pour in the chicken or vegetable broth. Simmer for 10 minutes, or until the fish is cooked through.
  4. In a small bowl, whisk together the heavy cream and egg yolks. Slowly pour the cream mixture into the pot, stirring constantly. Cook for an additional 5 minutes, until the stew thickens slightly.
  5. In a separate small bowl, mix the flour with a few tablespoons of the hot broth from the pot to create a slurry. Stir the slurry back into the pot to further thicken the stew.
  6. Season the waterzooi with salt and pepper to taste. Remove the bay leaf and discard.
  7. Serve the waterzooi hot, garnished with fresh parsley.
