Wazwan Mutton (वज़वान मटन)

Ingredients
- 1 kg mutton, cut into pieces
- 2 large onions, finely sliced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2-3 green chilies, slit
- 1/2 cup yogurt
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon fennel powder
- 1 teaspoon dry ginger powder
- 1/2 teaspoon garam masala
- 4-5 cups water
- Salt to taste
- 2 tablespoons ghee
- 2 tablespoons mustard oil
- Fresh coriander leaves for garnish
Instructions
- Heat ghee and mustard oil in a heavy-bottomed pan.
- Add sliced onions and sauté until golden brown.
- Add minced garlic, grated ginger, and green chilies. Sauté for a few minutes.
- Add mutton pieces and cook until they change color.
- Whisk yogurt with turmeric, red chili powder, fennel powder, dry ginger powder, and garam masala. Add this mixture to the mutton.
- Cook on medium heat for 5-7 minutes, stirring occasionally.
- Pour water, cover the pan, and cook on low heat for 1.5 to 2 hours or until the mutton is tender.
- Garnish with fresh coriander leaves before serving.
