Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and diced
- 1/4 cup dried cranberries
- 1/4 cup white chocolate chips
- 1 large egg, beaten
- 2-3 tablespoons milk
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- Add the cold diced butter to the dry ingredients and rub together with your fingertips until the mixture resembles breadcrumbs.
- Stir in the dried cranberries and white chocolate chips.
- Add the beaten egg and 2 tablespoons of milk, then mix to form a soft dough. Add an extra tablespoon of milk if needed.
- Roll out the dough on a floured surface to about 1/4 inch thickness and cut out rounds using a cookie cutter.
- Heat a griddle or heavy-bottomed pan over medium heat and cook the Welsh cakes for about 3-4 minutes on each side until golden brown and cooked through.
- Transfer the cooked Welsh cakes to a wire rack to cool.
- Sprinkle with a little extra sugar before serving, if desired.
