Ingredients

  • 2 cups all-purpose flour

  • 1/2 cup unsalted butter, cold and diced
  • 1/4 cup dried cranberries
  • 1/4 cup white chocolate chips
  • 1 large egg, beaten
  • 2-3 tablespoons milk

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  2. Add the cold diced butter to the dry ingredients and rub together with your fingertips until the mixture resembles breadcrumbs.
  3. Stir in the dried cranberries and white chocolate chips.
  4. Add the beaten egg and 2 tablespoons of milk, then mix to form a soft dough. Add an extra tablespoon of milk if needed.
  5. Roll out the dough on a floured surface to about 1/4 inch thickness and cut out rounds using a cookie cutter.
  6. Heat a griddle or heavy-bottomed pan over medium heat and cook the Welsh cakes for about 3-4 minutes on each side until golden brown and cooked through.
  7. Transfer the cooked Welsh cakes to a wire rack to cool.
  8. Sprinkle with a little extra sugar before serving, if desired.
