Welsh Dragon Stew
Welsh Dragon Stew is a traditional dish from the beautiful region of Carmarthenshire, known for its rich flavors and hearty ingredients.
Ingredients
- 2 lbs lamb, cut into chunks
- 2 onions, chopped
- 3 carrots, sliced
- 2 parsnips, diced
- 2 potatoes, cubed
- 2 cloves garlic, minced
- 2 tbsp flour
- 2 cups beef stock
- 1 cup red wine
- 2 tbsp tomato paste
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, brown the lamb over medium heat.
- Add the onions and garlic, and cook until softened.
- Sprinkle the flour over the lamb and vegetables, stirring to coat.
- Pour in the beef stock and red wine, then add the tomato paste and bay leaf.
- Add the carrots, parsnips, and potatoes, then season with salt and pepper.
- Cover and simmer for 2 hours, stirring occasionally, until the lamb is tender and the vegetables are cooked through.
- Remove the bay leaf and serve hot.
