Welsh Dragon Stew

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 onions, chopped
  • 3 carrots, sliced
  • 2 parsnips, diced
  • 2 potatoes, cubed
  • 2 cloves garlic, minced
  • 2 tbsp flour
  • 2 cups beef stock
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the lamb over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Sprinkle the flour over the lamb and vegetables, stirring to coat.
  4. Pour in the beef stock and red wine, then add the tomato paste and bay leaf.
  5. Add the carrots, parsnips, and potatoes, then season with salt and pepper.
  6. Cover and simmer for 2 hours, stirring occasionally, until the lamb is tender and the vegetables are cooked through.
  7. Remove the bay leaf and serve hot.
