Welsh Dragon Veggie Burger

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup grated carrots
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs
  • 4 burger buns
  • Lettuce, tomato, and other desired toppings

Instructions

  1. In a large bowl, mash the black beans with a fork or potato masher.
  2. Add the cooked quinoa, grated carrots, chopped bell pepper, red onion, minced garlic, smoked paprika, cumin, cayenne pepper, salt, and pepper to the bowl. Mix until well combined.
  3. Add the breadcrumbs to the mixture and stir until the mixture holds together. If it's too dry, add a little water.
  4. Form the mixture into 4 burger patties and place them on a plate. Refrigerate for at least 30 minutes to help them firm up.
  5. Heat a non-stick skillet over medium heat. Cook the veggie burgers for 4-5 minutes on each side, or until golden brown and heated through.
  6. Assemble the burgers on the buns with your favorite toppings.
