Welsh Dragon Veggie Burger

Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked quinoa
- 1/2 cup grated carrots
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 1/4 cup breadcrumbs
- 4 burger buns
- Lettuce, tomato, and other desired toppings
Instructions
- In a large bowl, mash the black beans with a fork or potato masher.
- Add the cooked quinoa, grated carrots, chopped bell pepper, red onion, minced garlic, smoked paprika, cumin, cayenne pepper, salt, and pepper to the bowl. Mix until well combined.
- Add the breadcrumbs to the mixture and stir until the mixture holds together. If it's too dry, add a little water.
- Form the mixture into 4 burger patties and place them on a plate. Refrigerate for at least 30 minutes to help them firm up.
- Heat a non-stick skillet over medium heat. Cook the veggie burgers for 4-5 minutes on each side, or until golden brown and heated through.
- Assemble the burgers on the buns with your favorite toppings.
