Ingredients
- 1 lb Welsh Dragon's Roar sausage, casings removed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cumin
- 1/2 cup chopped fresh cilantro
- 8 small flour tortillas
- 1 cup shredded cheddar cheese
- 1 avocado, sliced
- Lime wedges, for serving
Instructions
- In a large skillet, cook the Welsh Dragon's Roar sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8 minutes.
- Add the onion, garlic, and red bell pepper to the skillet and cook until the vegetables are softened, about 5 minutes.
- Stir in the smoked paprika, cayenne pepper, and ground cumin, and cook for an additional 2 minutes.
- Remove the skillet from the heat and stir in the chopped cilantro.
- Warm the flour tortillas in a dry skillet or in the microwave.
- Divide the sausage mixture among the tortillas and top with shredded cheddar cheese, sliced avocado, and a squeeze of lime juice.
- Serve the Welsh Dragon's Roar Tacos with additional lime wedges on the side.
