Welsh Dragon's Roar Tacos

Ingredients

  • 1 lb Welsh Dragon's Roar sausage, casings removed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground cumin
  • 1/2 cup chopped fresh cilantro
  • 8 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 avocado, sliced
  • Lime wedges, for serving

Instructions

  1. In a large skillet, cook the Welsh Dragon's Roar sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8 minutes.
  2. Add the onion, garlic, and red bell pepper to the skillet and cook until the vegetables are softened, about 5 minutes.
  3. Stir in the smoked paprika, cayenne pepper, and ground cumin, and cook for an additional 2 minutes.
  4. Remove the skillet from the heat and stir in the chopped cilantro.
  5. Warm the flour tortillas in a dry skillet or in the microwave.
  6. Divide the sausage mixture among the tortillas and top with shredded cheddar cheese, sliced avocado, and a squeeze of lime juice.
  7. Serve the Welsh Dragon's Roar Tacos with additional lime wedges on the side.
