Ingredients

  • 2 lbs Welsh lamb, cubed
  • 4 large leeks, sliced
  • 3 carrots, diced

  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp flour
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Add the lamb cubes and brown on all sides.
  3. Add the leeks, carrots, and garlic to the pot. Cook for 5 minutes, stirring occasionally.
