Ingredients
- 2 lbs Welsh lamb, cubed
- 4 large leeks, sliced
- 3 carrots, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 cups beef broth
- 1 cup red wine
- 2 tbsp flour
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large Dutch oven, heat the olive oil over medium-high heat. Add the lamb cubes and brown on all sides.
- Add the leeks, carrots, and garlic to the pot. Cook for 5 minutes, stirring occasionally.
- Sprinkle the flour over the lamb and vegetables, and stir to coat.
- Pour in the beef broth and red wine. Season with salt and pepper. Bring to a simmer.
- Cover the pot and transfer to the preheated oven. Cook for 1.5 hours, or until the lamb is tender.
- Remove the casserole from the oven and let it rest for 10 minutes before serving.
