Welsh Rarebit Bites

Ingredients

  • 1 loaf of French bread, sliced into 24 pieces
  • 2 cups grated cheddar cheese
  • 1/4 cup butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Dijon mustard
  • 1/2 cup milk
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Preheat the broiler.
  2. Place the bread slices on a baking sheet and toast under the broiler for 1-2 minutes on each side, until lightly golden.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  4. Whisk in the mustard, milk, cayenne pepper, salt, and pepper. Cook and stir until thickened.
  5. Remove the sauce from the heat and stir in the grated cheddar cheese until melted and smooth.
  6. Spread the cheese mixture onto each toasted bread slice.
  7. Place the topped bread back under the broiler for 2-3 minutes, until the cheese is bubbly and golden brown.
