Welsh Whisky Chocolate Mousse

Ingredients

  • 200g dark chocolate, chopped
  • 1/4 cup Welsh whisky
  • 3 eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream

Instructions

  1. In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Stir in the Welsh whisky and let it cool slightly.
  2. In a separate bowl, whisk the egg yolks with half of the sugar until pale and creamy. Gradually add the chocolate mixture and stir until well combined.
  3. In a clean bowl, whip the egg whites with the remaining sugar until stiff peaks form. In another bowl, whip the heavy cream until soft peaks form.
  4. Gently fold the whipped cream into the chocolate mixture, followed by the whipped egg whites. Be careful not to overmix.
  5. Divide the mousse into serving glasses and refrigerate for at least 4 hours, or until set.
