Welsh Whisky Chocolate Mousse

Ingredients
- 200g dark chocolate, chopped
- 1/4 cup Welsh whisky
- 3 eggs, separated
- 1/4 cup granulated sugar
- 1 cup heavy cream
Instructions
- In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Stir in the Welsh whisky and let it cool slightly.
- In a separate bowl, whisk the egg yolks with half of the sugar until pale and creamy. Gradually add the chocolate mixture and stir until well combined.
- In a clean bowl, whip the egg whites with the remaining sugar until stiff peaks form. In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the chocolate mixture, followed by the whipped egg whites. Be careful not to overmix.
- Divide the mousse into serving glasses and refrigerate for at least 4 hours, or until set.
