Welsh Whisky Sticky Toffee Pudding

Ingredients

  • 1 cup pitted dates, chopped
  • 1 teaspoon baking soda
  • 1 1/4 cups boiling water
  • 1/4 cup Welsh whisky
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x9 inch baking dish.
  2. In a small bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 5 minutes. Stir in the Welsh whisky and set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the flour mixture to the butter mixture, alternating with the date mixture. Mix until just combined.
  5. Pour the batter into the prepared baking dish and smooth the top. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the pudding is baking, prepare the toffee sauce.
  7. Once the pudding is done, remove it from the oven and let it cool for 10 minutes. Then, poke holes all over the top of the pudding with a skewer.
  8. Pour half of the warm toffee sauce over the warm pudding, allowing it to soak in. Serve the remaining toffee sauce on the side.
