Welsh Whisky Sticky Toffee Pudding

Ingredients
- 1 cup pitted dates, chopped
- 1 teaspoon baking soda
- 1 1/4 cups boiling water
- 1/4 cup Welsh whisky
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x9 inch baking dish.
- In a small bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 5 minutes. Stir in the Welsh whisky and set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the flour mixture to the butter mixture, alternating with the date mixture. Mix until just combined.
- Pour the batter into the prepared baking dish and smooth the top. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- While the pudding is baking, prepare the toffee sauce.
- Once the pudding is done, remove it from the oven and let it cool for 10 minutes. Then, poke holes all over the top of the pudding with a skewer.
- Pour half of the warm toffee sauce over the warm pudding, allowing it to soak in. Serve the remaining toffee sauce on the side.
