Whale in Tomato Sauce, known as Tasty Ibihaza in Burundian cuisine, is a flavorful and hearty dish that is perfect for a special occasion or a comforting family meal.
Ingredients
- 2 lbs whale meat, cut into chunks
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 cups tomato puree
- 1 cup water
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the whale meat chunks to the pot and brown on all sides.
- Pour in the tomato puree and water, then add the paprika, cumin, salt, and pepper.
- Reduce the heat to low, cover the pot, and simmer for 1 hour, stirring occasionally.
- Once the whale meat is tender and the sauce has thickened, remove from heat and let it rest for a few minutes before serving.
