Wheat-free Chicken Fajita Bowl

Ingredients

  • 1 pound boneless, skinless chicken breasts, sliced
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  2. Add the sliced chicken to the skillet and season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for 5-7 minutes or until the chicken is cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of olive oil and sauté the bell peppers and onion until they are tender-crisp.
  5. Divide the cooked quinoa among four bowls and top with the cooked chicken, sautéed bell peppers and onion, sliced avocado, and fresh cilantro.
