Wheat-free Cucumber And Avocado Sushi
This Wheat-Free Cucumber and Avocado Sushi recipe is a refreshing and healthy alternative to traditional sushi. The combination of creamy avocado and crisp cucumber wrapped in nori seaweed makes for a delicious and satisfying meal or snack.
Ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 ripe avocados, sliced
- 2 large cucumbers, julienned
- 4 sheets nori seaweed
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Instructions
- Rinse the sushi rice in a fine-mesh strainer until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
- In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar and salt are dissolved. Remove from heat and let the mixture cool.
- Transfer the cooked rice to a large wooden or glass bowl. Gently fold in the vinegar mixture, being careful not to mash the rice. Allow the rice to cool to room temperature.
- Place a sheet of nori on a bamboo sushi mat. With wet hands, spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
- Arrange a few slices of avocado and julienned cucumber in the center of the rice. Using the bamboo mat, roll the sushi into a tight cylinder.
- Repeat with the remaining ingredients.
- Using a sharp knife, slice the sushi rolls into 6 pieces each. Serve with soy sauce, pickled ginger, and wasabi.
