Ingredients
- 1 large eggplant, sliced into 1/2-inch rounds
- 1 cup gluten-free breadcrumbs

- 1 1/2 cups marinara sauce
- 1 cup dairy-free mozzarella cheese, shredded
- 1/4 cup dairy-free parmesan cheese, grated
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, combine the gluten-free breadcrumbs, Italian seasoning, garlic powder, and onion powder.

- Repeat the layers with the remaining ingredients.
- Bake the eggplant parmesan for 20 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes, then garnish with fresh basil leaves before serving.
