Wheat-free Stuffed Cabbage Rolls

Ingredients

  • 1 head of cabbage
  • 1 pound ground turkey
  • 1 onion, diced
  • 1 cup cooked quinoa
  • 1 cup tomato sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Bring a large pot of water to a boil. Carefully remove the cabbage leaves and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  3. In a skillet, cook the ground turkey and onion until the turkey is no longer pink. Add the cooked quinoa, tomato sauce, garlic powder, paprika, salt, and pepper. Stir to combine.
  4. Place a spoonful of the turkey and quinoa mixture onto each cabbage leaf. Roll the leaves, tucking in the sides, and place them seam side down in a baking dish.
  5. Cover the rolls with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes.
  6. Serve hot and enjoy!
