Ingredients

  • 1 pound ground turkey
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the ground turkey, almond flour, Parmesan cheese, parsley, egg, garlic powder, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
  4. In the same skillet, add the onion and garlic. Cook until softened, about 5 minutes.
  5. Add the crushed tomatoes, oregano, and basil to the skillet. Season with salt and pepper to taste. Bring to a simmer.
  6. Return the meatballs to the skillet, spooning the tomato sauce over them. Cover and simmer for 10-15 minutes, or until the meatballs are cooked through.
  7. Serve the meatballs and tomato sauce over cooked spaghetti squash or zucchini noodles.
