Ingredients
- 4 catfish fillets
- 1/2 cup of ground crayfish

- 2 tablespoons of ground crayfish
- 2 scotch bonnet peppers, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch of ginger, grated
- 4 cups of chicken or fish stock
- Salt to taste
- 2 cups of water
- Uziza leaves for garnish
Instructions
- Season the catfish fillets with salt and set aside.
- In a pot, combine the chicken or fish stock, chopped onions, garlic, ginger, and scotch bonnet peppers. Bring to a boil and let it simmer for 10 minutes.
- Add the seasoned catfish fillets to the pot and cook for 10 minutes.
- In a bowl, mix the yam powder with water to form a smooth paste.
- Add the yam paste to the pot, stirring continuously to prevent lumps from forming.
- Add the ground crayfish, uziza seeds, and ehuru to the pot. Stir well to combine.
- Let the soup simmer for 20-30 minutes, stirring occasionally, until it thickens to your desired consistency.
- Garnish with uziza leaves and serve hot with fufu or pounded yam.
