Ingredients

  • 4 catfish fillets
  • 1/2 cup of ground crayfish
  • 1/2 cup of yam powder
  • 2 tablespoons of ground uziza seeds
  • 2 tablespoons of ground ehuru (calabash nutmeg)
  • 2 tablespoons of ground crayfish
  • 2 scotch bonnet peppers, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch of ginger, grated
  • 4 cups of chicken or fish stock
  • Salt to taste
  • 2 cups of water
  • Uziza leaves for garnish

Instructions

  1. Season the catfish fillets with salt and set aside.
  2. In a pot, combine the chicken or fish stock, chopped onions, garlic, ginger, and scotch bonnet peppers. Bring to a boil and let it simmer for 10 minutes.
  3. Add the seasoned catfish fillets to the pot and cook for 10 minutes.
  4. In a bowl, mix the yam powder with water to form a smooth paste.
  5. Add the yam paste to the pot, stirring continuously to prevent lumps from forming.
  6. Add the ground crayfish, uziza seeds, and ehuru to the pot. Stir well to combine.
  7. Let the soup simmer for 20-30 minutes, stirring occasionally, until it thickens to your desired consistency.
  8. Garnish with uziza leaves and serve hot with fufu or pounded yam.
