Wiener Käsespätzle (Käsespätzle)
Käsespätzle, also known as Wiener Käsespätzle, is a traditional Central European dish that consists of soft egg noodles mixed with melted cheese and topped with crispy onions. It's a comforting and hearty meal that is perfect for a cozy night in.
Ingredients
- 2 cups all-purpose flour
- 4 eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 2 cups grated Emmental cheese
- 1/2 cup grated Gruyère cheese
- 1/4 cup butter
- 2 large onions, thinly sliced
- Salt and pepper to taste
Instructions
- In a large bowl, whisk together the flour, eggs, milk, salt, and nutmeg to form a smooth, thick batter.
- Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter through the holes directly into the boiling water.
- Cook the spätzle for 2-3 minutes or until they float to the surface, then remove them with a slotted spoon and transfer to a large bowl.
- While the spätzle are cooking, melt the butter in a large skillet over medium heat. Add the sliced onions and cook until golden and crispy. Remove from the skillet and set aside.
- Preheat the oven to 350°F (175°C). Layer half of the cooked spätzle in a greased baking dish, then sprinkle half of the grated Emmental and Gruyère cheese on top. Repeat with the remaining spätzle and cheese.
- Bake for 15-20 minutes or until the cheese is melted and bubbly.
- Before serving, top the Käsespätzle with the crispy onions and season with salt and pepper to taste.
