Ingredients
- 200g dark chocolate, chopped
- 4 eggs, separated
- 50g sugar
- 1 tsp vanilla extract
- 200ml heavy cream
Instructions
- In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Let it cool slightly.
- In a separate bowl, beat the egg yolks with sugar until pale and creamy. Stir in the vanilla extract.
- In another bowl, whip the heavy cream until soft peaks form.
- Gradually fold the melted chocolate into the egg yolk mixture, then gently fold in the whipped cream.
- In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture.
- Pour the mousse into serving glasses and refrigerate for at least 4 hours before serving.
