Wiener Schokoladenmousse (viennese Chocolate Mousse)

Ingredients

  • 200g dark chocolate, chopped
  • 4 eggs, separated

  • 200ml heavy cream

Instructions

  1. In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Let it cool slightly.
  2. In a separate bowl, beat the egg yolks with sugar until pale and creamy. Stir in the vanilla extract.
  3. In another bowl, whip the heavy cream until soft peaks form.
  4. Gradually fold the melted chocolate into the egg yolk mixture, then gently fold in the whipped cream.
  5. In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture.
  6. Pour the mousse into serving glasses and refrigerate for at least 4 hours before serving.
