Wild Cucumber Curry (rajasthani Kachri Ki Sabzi)
Wild Cucumber Curry, also known as Rajasthani Kachri ki Sabzi, is a traditional dish from the Rajasthani cuisine. This flavorful and spicy curry is made with wild cucumbers and a blend of aromatic spices, making it a perfect accompaniment to steamed rice or Indian breads.
Ingredients
- 4-5 wild cucumbers, peeled and chopped
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1/2 tsp asafoetida (hing)
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 2 cups water
- Fresh coriander leaves for garnish
Instructions
- Heat vegetable oil in a pan and add cumin seeds. Let them splutter.
- Add asafoetida, turmeric powder, red chili powder, and coriander powder. Saute for a minute.
- Add the chopped wild cucumbers and mix well. Cook for 5 minutes.
- Pour in the water, add salt, and cover the pan. Let it simmer for 15-20 minutes until the cucumbers are tender.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
