Ingredients

  • 4-5 wild cucumbers, peeled and chopped
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1/2 tsp asafoetida (hing)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 cups water
  • Fresh coriander leaves for garnish

Instructions

  1. Heat vegetable oil in a pan and add cumin seeds. Let them splutter.
  2. Add asafoetida, turmeric powder, red chili powder, and coriander powder. Saute for a minute.
  3. Add the chopped wild cucumbers and mix well. Cook for 5 minutes.
  4. Pour in the water, add salt, and cover the pan. Let it simmer for 15-20 minutes until the cucumbers are tender.
  5. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
